The meat. Not just the grill.
That’s right, you should take your meat out of the fridge at least twenty to thirty minutes before you want to BBQ it. Letting it sit at room temperature for a little while will help you cook the perfect steak. The trick to a great steak on the grill is to make sure you cook it at a high temperature for as short a time as possible.
This means that if you slap an ice-cold steak on a hot grill, the steak will take much longer to cook resulting in a tougher meat texture when all is said and done. Cooking it on a grill while the middle is just a little bit cool will help achieve that perfect-medium slice of steak.
You may have one of those super long fork things that come with every BBQ utensil set ever made, but please don’t use it when flipping or moving your meat. Just say no to forks or any other pronged utensil that may pierce the meat. If you pierce the flesh of the meat while it is cooking, juices will escape. If juices escape, your meat will turn out much drier and much less flavorful. Instead, try to use a spatula or even a great pair of tongs to move or flip your meat while BBQing on the grill.

Have a large roasting pot? Or maybe an ordinary large pot with a lid? Have it nearby while grilling so you can put your cooked meat in it. This will not only help while transporting your meat from the grill to the table but it will also keep your barbeque warm, moist, and juicy. There’s nothing worse than dried-out meat because it sat out too long after being grilled perfectly.
Hamburgers are a favorite for many people when grilling outdoors. This tip is for you. We all know how burgers like to puff up in the center while they cook which can make for a not-so-picture-perfect patty, but also make it hard to pile on those toppings.
To keep that from happening, just make an indent on the top of each patty before grilling.
All you have to do is use your thumb or even the back of a spoon and press into the center of the raw meat. This will give your burger room to bubble in the middle without causing a bump. It also helps your burgers in the shrinkage department.
We love a good BBQ sauce as much as the next guy, but fight against temptation and hold off on slathering your meat with sauce until at least the last 30 minutes of grilling.
A lot of sauces, including BBQ sauces, contain sugar, and sugar will burn on a grill given the chance. And that would ruin those lovely ribs you’ve been cooking. Patience is key in the sauce slathering department.
Such a simple tip, but one of the most important ones when grilling meat outside on a BBQ grill. After you take your meat off the grill, don’t just cut into it immediately. Instead, let it have a rest of 5-10 minutes before slicing. If you’re worried about those award-worthy grill marks disappearing, put your meat on a cooling rack instead of in a tray.
This will allow air to cool the meat from the top and the bottom and then you can cool it for a little less time.
